It has been over two months and I’m still going strong! I am LOVING this plant-based food lifestyle so much! On occasion, however, I miss having some of my favorite “SAD” foods (i.e. standard american diet). This weekend, it was Mexican food. I wanted the spice……… of a BURRITO! I rummaged through my fridge in search of what would kill the craving. I had green onions, carrots, zucchini, leeks, garlic, tomatoes, brocolli and much more. I also had a head of cabbage neatly tucked away in the back. I stared at it, wondering what I could make with it. Then something clicked! I wondered whether I could make a burrito-style stuffing using the vegetables I had in my fridge and wrap it into one of the cabbage leaves! That is exactly what I did, and let me tell you! The crunch of the cabbage leaves felt like roasted tacos! It has a very mild flavor and made a wonderful meal! I made several wraps and enjoyed them one by one.
I thought I was on to something new! Something that had never been thought of before! After enjoying a filling cabbage-burrito meal, I searched the internet for what I thought was BETTER than sliced bread! Sigh, I was not reinventing the wheel. There are many people who have created similar dishes to what I had just enjoyed. Either way – give these vegan wraps a try…. I promise, you will be pleasantly surprised!
